How To Make Korean Potato Side Dish in 3 Easy Ways

Korean side dishes are now becoming more popular especially among those cooks or moms who want to serve their children and guests something new. The traditional Korean potato side dish is called as Gamja Jorim in Korean. Gamja means potato.

How To Make Korean Potato Side Dish in 3 Easy Ways

Step-by-Step Guide on Cooking Korean Potato Side Dish – Gamja Jorim

What You Need:

  • 340g of baby potatoes
  • Three tablespoons jinkanjang soy sauce
  • Two teaspoon soy sauce
  • One dried shitake mushroom
  • One tablespoon sugar
  • Two tablespoon maple syrup
  • 1 and ½ cup of water for boiling
  • 2 cups of water for sauce
  • Sesame oil
  • One tablespoon of vegetable oil
  • Pot
  • Sprinkle with sesame seeds

Step 1: Prepare the Potatoes

Rinse the potatoes. If you use the large and thick skinned ones, skin the potatoes and cut them into cubes.

Step 2: Cook Potatoes

Prepare the pot. Fill with enough water to cover all the potatoes. If you are using an 8 inches pot, put 1 and ½ cup of water. Cook the potatoes until tender. Make sure not to overcook them. Once the boiling starts, adjust the heat to medium. Cook the potatoes for 10 minutes. After that, drain it.

Step 3: Add Potatoes Back

After draining, add the potatoes back to the pot. Add the following: 2 cups of water, sugar, three tablespoons of soy sauce, vegetable oil and sugar. You can add one dried shitake mushroom, but this is only optional. However, I add this because it adds flavor.

Boil again. Simmer and cover for approximately 30 minutes until you see that the liquid is reduced to 1/3.

Step 4: Uncover

Add two tablespoon of maple syrup after uncovering. Reduce or uncover further until you can see that there’s almost no liquid. To check its taste, taste the potatoes. If you want it to be more delicious when served with rice, add one teaspoon of soy sauce.

Step 5: Coat Potatoes

Make sure that the sauce coats the potatoes. This final step is necessary to ensure that the potatoes are evenly coated. Add the sprinkle of sesame seeds and a swirl of sesame oil. Your Korean side dish is now ready to serve.

If you want the traditional way of cooking this Korean potato side dish, make sure that you don’t overcook it. If you cut a large potato into cubes and you use the starchy or floury ones, it tends to become a mashed gamja jorim. If you want to achieve the cube-style, choose the round, red bliss or yellow potatoes.

Cube Style Recipe

This is the cube-style Korean potato side dish just in case you want to try this recipe too.

What You Need:

  • Potatoes
  • Corn syrup
  • Soy sauce
  • Water

What to Do:

1. After cutting the potatoes into cubes, soak them with water to get rid of the starch.

2. In another bowl, mix the corn syrup or rice syrup, soy sauce, and water.

3. Combine the sauce, potato, and dried sea kelp. Boil the potatoes gently and cook. After 2 minutes, remove the sea kelp.

4. Adjust the heat to medium-low. Simmer the potatoes to soften them and thicken the sauce. Leave for 5 minutes. If you want the spicy kick, add green chili. However, it’s only optional.

5. When the potatoes are already tender, and the sauce is thick, it’s done. Avoid overcooking the potatoes so that it won’t be mushy.

6. Remove from the heat.

Braised Style

There are other ways of serving Gamja Jorim; it can be a side dish or a snack and appetizer. In this other recipe, we are sharing with you the Braced style method.

What You Need:

  • Two medium-sized potatoes
  • Two teaspoons minced garlic
  • One tablespoon sugar
  • Two tablespoon soy sauce
  • Two tablespoon vegetable oil
  • One tablespoon malt syrup
  • ½ black pepper
  • Two teaspoon sesame seeds
  • ½ cup of water

What to Do:

Step 1: Cut the Potatoes

Wash the potatoes. Peel them into ½ inch cubes. Cut the onion into similar size.

Step 2: Soak Potatoes

The same with the previous recipe, soak the potatoes in water to get rid of the starch. Drain them.

Step 3: Pan-fry Potatoes

Put two tablespoons of vegetable on the pot. Preheat for 1 minute. Add the potatoes and cook over high heat. Keep on stirring. Do that for 3 minutes until they’re half cooked.

Step 4: Add Onions

Add the onions while you continue stirring. Add more oil if the potatoes stick to the bottom.

Step 5: Add Seasoning

Mix the following: malt syrup, soy sauce, sugar, minced garlic, water and pepper and pour to the cubes.

Step 6: Braise

Simmer on medium heat. Let the seasoning sauce thicken. Stir to make sure the potatoes are not sticking to the bottom. If the potatoes are not fully cooked yet, add some water. Use a form to check if the potatoes are already cooked or not.

Step 7: Serve

Turn off the heat. Add sesame seeds. Drizzle the sauce on top. You’re now ready to enjoy the braised style potato side dish.
